  • 1 cup shrimp peeled and deveined
  • 1 cup steak cubed, sirloin or ribeye
  • 3 cups cooked rice day-old jasmine or long-grain
  • 0.5 cup carrots finely diced
  • 0.5 cup peas
  • 2 eggs scrambled
  • 2 cloves garlic minced
  • 3 green onions sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil

Instructions
 

  • Dice steak and prepare shrimp, vegetables, and scrambled eggs in advance.
  • In a hot skillet or wok, sear steak until browned and tender. Remove and set aside.
  • Cook shrimp until just pink. Remove and set aside.
  • In the same pan, sauté garlic and carrots. Scramble eggs on one side, then mix together.
  • Add rice, break it up, and stir-fry until lightly toasted.
  • Add soy sauce, oyster sauce, and sesame oil. Return steak and shrimp to the pan and mix well.
  • Garnish with green onions and serve hot.

Notes

Use cold, day-old rice for the best fried texture. Reheat leftovers with a splash of soy sauce to keep them moist.
