  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 1/2 cup cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium. Sauté garlic and spinach until wilted. Let cool slightly.
  • In a bowl, mix spinach, cream cheese, and mozzarella until well combined.
  • Cut a pocket into each chicken breast and fill with the spinach mixture. Secure with toothpicks.
  • Season chicken with salt, pepper, and paprika. Place in baking dish.
  • Bake for 25–30 minutes or until internal temperature reaches 165°F.
