Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 cups fresh spinach
- 2 cloves garlic minced
- 1/2 cup cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium. Sauté garlic and spinach until wilted. Let cool slightly.
In a bowl, mix spinach, cream cheese, and mozzarella until well combined.
Cut a pocket into each chicken breast and fill with the spinach mixture. Secure with toothpicks.
Season chicken with salt, pepper, and paprika. Place in baking dish.
