Ingredients
  

  • 2 large chicken breasts
  • 1/3 cup sweet chili sauce
  • 2 cups cooked jasmine rice
  • 1/2 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cups mixed greens or shredded lettuce
  • 1 cup cucumber slices
  • 1 cup carrot ribbons
  • to taste salt and pepper
  • 1 tablespoon cooking oil

Instructions
 

  • Cook jasmine rice according to package instructions and keep warm.
  • Whisk coconut milk, lime juice, cilantro, and salt; chill.
  • Season chicken with salt and pepper, cook in skillet 4–5 minutes per side; brush with sweet chili sauce.
  • Prepare cucumbers, carrots, and greens.
  • Assemble bowls with rice, greens, vegetables, chicken, and drizzle.

Notes
