Ingredients
  

  • 450 g chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 0.5 cup chopped sun-dried tomatoes
  • 300 g fettuccine or linguine pasta
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Cut chicken into bite-sized chunks and season with salt, pepper, garlic powder, and Cajun seasoning.
  • Heat olive oil and butter in a skillet. Sear chicken until golden brown and cooked through. Remove and set aside.
  • In the same skillet, melt butter, sauté minced garlic until fragrant.
  • Stir in heavy cream, bring to a gentle simmer, then add Cajun seasoning and parmesan until sauce thickens.
  • Add chopped sun-dried tomatoes into the sauce.
  • Boil pasta until al dente, drain, and reserve 1/2 cup pasta water.
  • Return chicken to skillet, add pasta, and toss everything together. Adjust sauce with reserved pasta water if needed.
  • Garnish with parsley and extra parmesan before serving.

Notes

For extra spice, add a pinch of red pepper flakes to the Alfredo sauce. If reheating leftovers, stir in a splash of cream or milk to restore the sauce’s silky texture.
