Ingredients
  

Chicken & Tomatoes

  • 1.5 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1.5 tsp Italian seasoning
  • 1 tsp kosher salt
  • 0.75 tsp black pepper freshly ground
  • 0.5 cup sun-dried tomatoes oil-packed, drained and chopped

Cajun Alfredo Sauce

  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 2 tbsp fresh parsley, chopped for garnish

Pasta

  • 12 oz rotini pasta
  • 1 tbsp kosher salt for pasta water

Instructions
 

  • Season Chicken – Pat chicken dry and cut into 1‑inch pieces. Toss with olive oil, Italian seasoning, salt, and pepper.
  • Sear – Heat a large skillet over medium‑high. Sear chicken in two batches until golden and cooked through, 4–5 minutes per batch. Transfer to a plate.
  • Build Sauce Base – Reduce heat to medium. Add butter; sauté garlic 30 seconds. Stir in Cajun seasoning and sun‑dried tomatoes.
  • Make Alfredo – Pour in heavy cream; simmer 3–4 minutes until slightly thickened. Stir in Parmesan until smooth.
  • Cook Pasta – Boil rotini in salted water until al dente; reserve a little pasta water and drain.
  • Combine – Return chicken (and juices) to the skillet. Add pasta and toss, loosening with a splash of pasta water if needed.
  • Finish & Serve – Sprinkle parsley, adjust salt/pepper, and serve hot.

Notes

For extra heat, add 1/2 tsp crushed red pepper with the Cajun seasoning. If the sauce thickens after cooling, whisk in warm milk or pasta water over low heat.
