Instructions
Rub chicken with olive oil, salt, and pepper. Grill or pan-sear on medium heat for 6-7 minutes per side until golden and cooked through. Let rest before slicing.
Cook tortellini according to package directions. Drain and toss with olive oil to prevent sticking.
Blanch green beans in boiling water for 2-3 minutes, then rinse under cold water to stop cooking.
In a large bowl, combine tortellini, green beans, tomatoes, and sliced chicken. Drizzle with balsamic glaze and toss gently.
Top with chopped basil. Add optional red pepper flakes or Parmesan and serve warm.
Notes
For extra flavor, marinate chicken in balsamic vinaigrette for 30 minutes before cooking.
