  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil for chicken
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 9 oz cheese tortellini fresh or refrigerated
  • 1 cup cherry tomatoes halved
  • 1 cup green beans trimmed and halved
  • 2 tablespoons balsamic glaze
  • 1 tablespoon fresh basil chopped, plus extra for garnish
  • Optional: red pepper flakes, grated Parmesan to taste

Instructions
 

  • Rub chicken with olive oil, salt, and pepper. Grill or pan-sear on medium heat for 6-7 minutes per side until golden and cooked through. Let rest before slicing.
  • Cook tortellini according to package directions. Drain and toss with olive oil to prevent sticking.
  • Blanch green beans in boiling water for 2-3 minutes, then rinse under cold water to stop cooking.
  • In a large bowl, combine tortellini, green beans, tomatoes, and sliced chicken. Drizzle with balsamic glaze and toss gently.
  • Top with chopped basil. Add optional red pepper flakes or Parmesan and serve warm.

Notes

For extra flavor, marinate chicken in balsamic vinaigrette for 30 minutes before cooking.
