  • 0.5 cup chimichurri sauce (for marinade)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 cup cooked rice (or quinoa)
  • 2 cup mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, diced

Garlic Sauce

  • 0.5 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 2 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp water (to thin)
  • 0.25 tsp kosher salt

Finishing

  • 0.25 cup chimichurri sauce (for drizzling)

Instructions
 

  • Marinate: Pat chicken dry. Season with salt and pepper, then coat with 1/2 cup chimichurri. Marinate 30 minutes (up to 8 hours).
  • Make Garlic Sauce: Whisk yogurt, mayonnaise, garlic, lemon juice, water, and salt until smooth. Chill.
  • Grill Chicken: Heat a grill or grill pan to medium-high and oil lightly. Grill chicken 5–7 minutes per side until charred and 165°F inside. Rest 5 minutes; slice.
  • Build Bases: Divide rice and greens among 4 bowls.
  • Assemble: Top with sliced chicken, tomatoes, and avocado.
  • Finish & Serve: Drizzle garlic sauce and remaining chimichurri. Add herbs or red pepper flakes if desired.

Notes

Store components separately for up to 3 days; add avocado right before serving. Swap rice for cauliflower rice or quinoa to lighten it up.
