  • 1 lb ground beef
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups cheddar cheese, shredded
  • 1 bag (32 oz) tater tots
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned.
  • Add onion and garlic, cooking until softened.
  • Stir in corn, black beans, and cream of mushroom soup; season with salt, pepper, and paprika.
  • Spread mixture in a greased 9x13 baking dish.
  • Sprinkle shredded cheddar cheese evenly over the top.
  • Arrange tater tots in rows to cover the casserole.
  • Bake 35–40 minutes until tater tots are golden and crispy.
