Ingredients
  

  • 2 large chicken breasts
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 3 tablespoons butter
  • 2 tablespoons olive oil (plus extra for potatoes)
  • 12 oz fettuccine pasta (or spaghetti)
  • 1 ½ pounds baby potatoes, halved
  • 3 tablespoons hot honey
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Pat chicken dry and season with salt, pepper, and olive oil.
  • Toss halved potatoes with olive oil, salt, pepper, and hot honey. Roast at 425°F until golden and crispy (25–30 minutes).
  • Heat olive oil in a skillet and sear chicken until golden brown on both sides. Remove and set aside.
  • In the same skillet, melt butter, sauté garlic until fragrant, then add mushrooms until tender.
  • Pour in heavy cream, stir in Parmesan, and season with salt and pepper. Simmer until thickened.
  • Cook pasta until al dente, reserving ½ cup pasta water. Drain.
  • Slice chicken and return to the sauce. Toss pasta into the skillet with sauce and splash of pasta water.
  • Plate pasta with creamy chicken and serve with roasted potatoes. Garnish with fresh parsley.

Notes

Reheat leftovers with a splash of milk or cream to restore sauce creaminess. For extra heat, add a pinch of red pepper flakes to the Alfredo sauce.
